One of the best things that have happened to me in Australia has been trying this dish.
Thai Chicken Mango Curry, I think the name says it all…I was lucky to find a box of mangos for only 5 dollars at the Queen Victoria Market.
The first time I’ve tried this dish I didn’t stop thinking about it for weeks, so I encourage myself and I went to the supermarket and bought everything you need to do it, the result was amazing, very creamy, sweet and easy to cook.
1 kg of chicken fillets, cut into small pieces
3 big mangoes, cut into dice
1 cup of orange juice
1 cup of coconut cream
2 red onion, finely chopped
1 piece of ginger, finely chopped
3 cloves garlic, finely chopped
3 tablespoon red curry paste
White rise to side
Put the chicken in the skillet until cooked, then put the onion and garlic for about 3 minutes. Add the mango, orange juice cream of coconut, the curry paste and ginger and cook over low heat for 20 minutes. Easy!
Serve on a plate with white rice and lay the chopped cilantro over the chicken.
