I’ve never really seen this dish in Thailand but I found a similar recipe online that I changed and tried a similar version of it. The peanut sauce remind me a lot of Thai cuisine because it’s a very common ingredient in their preparations. For this recipe though instead of using real peanuts I tried it with peanut butter to give the sauce a thicker consistence. The result: amazing!!!
For the rub
– 1 tablespoon of sesame oil
– 1 tablespoon of chopped ginger
– 1/2 small onion chopped
– 1 teaspoon of paprika
– 1 teaspoon of cumin
– Salt and pepper
For the sauce
– 1/3 cup of soy sauce
– 1/2 cup of orange juice
– 2 tablespoons of ketchup
– 1/3 cup of peanut butter
– 1 tablespoon of fish sauce
– 3 tablespoons of brown sugar
– 1 teaspoon of siracha sauce
– 1 1/2 tablespoon of cornstarch
Step by step
Grab a plastic bag and put the chicken (without the skin) and all the ingredients for the rub. Mix well and reserve (hopefully for a couple of hours in the fridge) if you don’t have time it’s ok, just make sure everything is well mixed.
In a pan mix all the ingredients for the sauce and let it boil for a couple of minutes.
Put the chicken and the sauce in an oven proof pot (no cover).
Cook for 45 minutes at 180 degrees
Serve with chopped green onion and slices of orange.
When I cooked this chicken I served it with basmati rice, a very good combination!
