It’s warming up and fresh dishes are becoming necessary. Nothing better than a veggie style ceviche with mushroom, where all the flavours mix together into perfection. It is ideal as an accompaniment for a BBQ, starter or as a side dish.

All you need is:


1.  500g of button mushrooms (or a big mushroom basket)
2. One pepper
3. Bunch of Coriander
4. One onion

— To taste —
5. Fresh Chillies
6. White wine vinegar
7. Olive oil
8. Lemon juice


First you need to dice the onion in small cubes, and do the same with the pepper and chillies (remove the seeds if you don’t want it too spicy) before mixing them in a bowl.

Finely slice the mushroom. Then you will have to finely chop the coriander and add it into the mix. When you have all the ingredients together just add the lemon juice, white wine vinegar – very important as this will “cook” the mushroom – and olive oil.

Finally add salt to taste and let it stand for 30 mins and it will be ready to serve with fresh bread or crackers.
