My aunt Pía taught me this recipe when I visited her in Madrid. I was already in that city for 10 days, going from bar to bar and I needed a break from tapas. I needed some healthier food after all that chorizo!
What I like about this recipe is that it may look like a simple vegetables sauté, but typical spanish ingredients like olives, ham and anchovies gives a special taste to this preparation that I really enjoyed.
Ingredients (3 portions)
– 1 big onion cut in small pieces
– 1 zucchini cut in thin slices
– 3 small or 1 big carrot cut in slices
– 1/4 of a broccoli cut in small pieces
– 1/3 cup of olives cut in quarters
– 5-7 cherry tomatoes
– 3 artichokes hearts
– Fresh coriander
– 1/2 cup of spanish ham cut in small cubes
– 4 anchovies
– 1 1/2 cup of rice
Step by Step
Cook rice as usual. In this case we used brown rice but you can use the one you want.
In a frying pan sauté the onion and ham in a good amount of olive oil. Cook it for a couple of minutes and then add the carrots, zucchini, broccoli and artichokes. When everything is almost cooked add the olives, anchovies and tomatoes. Sauté for 2 more minutes.
Serve it with some rice, olive oil and coriander on the top.
