This is the perfect mix between simplicity, taste, crispiness and creamy.

For this plate we’ll need:

– A handful of fresh spinach leaves
– 1-2 medium/big potatoes
– 2-3 spoons of cream
– 1 free range egg
– Sal and pepper
– Oil to deep-fry

First we can make our spinach puree. For this just put in a hot pan the handful of fresh spinach leaves, and sauté them for about 3 minutes with a little bit of olive oil. Cut the heat. Add the cream and some salt and pepper. Make the puree with a blender or a mini pimer (you can also eat them without milled).

Now we wash and peel the potatoes. Stripes them as thin as you can with a grater. Form the nest, put in your hand (if you have special basket for this, is better) and deep-fried the potatoes until they are golden crispy.

Finally you need to do the fried egg. This part, just do it as you know. Some people like better a poached egg, others the fried by both sides…just do it as you like!

We assemble on a plate, first de nest, then the spinach and finally the egg.

All of the ingredients are for one person. Just multiply if you do it for more!
