ZUCCHINI CARPACCIO

For this recipe you’ll need:

– 1 fresh Zucchini
– 2 free range eggs
– About 300 cc of vegetable oil or sunflower oil
– A bit of olive oil
– 2 o 3 tea spoons of capers.
– Some chopped coriander
– 1 spoon of Dijon Mustard
– Some Parmigiano Reggiano
– Juice of 3 lemons and the zest of one.
– Salt and pepper

First of all, we need to make our homemade mayonnaise. Therefore we put in a blender 1 whole egg + a yolk and a spoon of Dijon Mustard, we mixed all a little bit (about 2 sec), and then we start pouring slowly the vegetable oil, blending all together taking our time until de mayonnaise is like a cream. Then we put the juice of 1 lemon, salt and pepper, we mix again for 5 seconds and we reserve it.

Now we wash the Zucchini, we cut it in to thin slices and we put them on a plate one next to the other. We add some mayonnaise over the zucchinis. We distribute the capers, chopped coriander and lemon zest over all. We splash it a little bit with lemon juice, olive oil, salt and pepper. And finally, we put on top, a little bit of Parmigiano Reggiano cheese…
